The space it left behind at Apache Plaza — 5165 S. Fort Apache Rd — will soon welcome Pasta & Pomo, a fresh handmade pasta bar bringing authentic Italian flavors to the neighborhood.

Pasta & Pomo is not your average Italian restaurant. The concept is built around fresh, handmade-to-order pasta that combines traditional Italian techniques with modern flavor profiles. Think made-from-scratch dishes prepared right in front of you — a dining experience that is rare in the Las Vegas Valley.

The Man Behind the Menu

The restaurant is backed by the Zaretti Dining Group, led by Chef Massimo Zaretti — a Rome-born restaurateur with over 23 years of experience in the hospitality industry. Zaretti built his career managing operations at elite five-star hotels and luxury resorts across Europe, Asia, and North America before launching his own flagship Italian concept in Ensenada, Mexico. Now he is bringing that same passion for authentic Italian cuisine to Las Vegas.

When Does It Open?

According to a Clark County permit, Pasta & Pomo is expected to open later this year at Suite 195 inside Apache Plaza in Spring Valley.
